Frost Bite? Ice Wine Is More Than Just Frozen Grapes


One of the most rapidly growing trends in the world of wine seems to be with the rise in popularity of ice wines (or eiswein in German). This is interesting because these wines have been around for almost 200 years yet have not had much time in the spotlight until recent history. The most famous ice wines are from Germany, however many other countries such as Canada, Austria, and even Australia have been known to produce ice wines of their own. Because Canada is much colder and is capable of more consistent freezing temperatures has actually surpassed Germany in the production of ice wine.

Ice wine is a dessert wine that is made from frozen grapes. Only the water freezes in the grapes, so when they are pressed frozen, the juice that is extracted is very concentrated and very sweet. This freezing must happen before fermentation, and the grapes need to be pressed frozen, otherwise the water will melt in the grapes and you will not have the concentrated juice required for ice wines.

Natural ice wines require a hard freeze to occur after the grapes have ripened. In Canada, this temperature is a minimum of 17 degrees Fahrenheit while in Germany this temperature is 19 degrees. This means that the grapes must remain on the vines for several months after a normal harvest and risk being lost to rot if there is no freeze. At the other extreme, if the freeze is too severe the grapes can not be harvested and pressed. Because the fruit must be pressed while it is still frozen, pickers must work late in the night or early in the morning and work while the cellar workers must work in unheated spaces to ensure the grapes do not thaw.

Sometimes wine makers prefer to use cryoextraction. Cryoextraction is a mechanical freezing that is used to simulate the effect of the natural frost that occurs so that grapes can be picked sooner and made into wine. In Germany and Canada, wine created this way can not be called ice wine, only wines which have been frozen naturally are allowed to be called as such.

Whereas regular wines might take days or weeks to ferment, ice wines can take months due to the higher sugar content. Even though it is normal for the sugar content in ice wine to run from 180 g/L up to as high as 320 g/L ice wine remains very refreshing because of the high acidity. Ice wine usually has a medium to full body, with a lingering finish while the nose is oftentimes reminiscent of peach, pear, honey, caramel, and green apples depending on the varietal grape. Pineapple, mango, and even lychee are quite common aromas with white varietals however this list is by far not exhaustive.

Because the juice from the grapes is more concentrated than regular wine, there is a much smaller yield. It is for this reason as well as the methods used that make ice wines more expensive than table wines. Ice wines can cost as much as $300 a bottle, which is why it is often sold in half bottles for as little as $50. Grapes that have insufficient brix (sugar) content can not be made into ice wine and are therefore usually sold under the label "special select late harvest" or "select late harvest" at a fraction of the price of true ice wines.

When to drink ice wine is a matter of personal taste. Some people believe that ice wine improve with age and supporters claim that the very high sugar level and high acidity preserve the content for years after bottling. There are then others who believe that with age the wine loses its distinctive acidity, fruitiness, aroma, and freshness. Being that ice wines are very versatile in this, when you decide to drink your ice wine depends on when you feel it tastes best.

Ice wines are becoming the latest trend in the wine world and it is easy to see why. Delicious and refreshing, ice wines are a delicacy and a testament to the skills of the wineries. More expensive than a traditional wine, it is not something that the average person can afford to purchase on a regular basis, but are an essential addition to a special occasion or meal.

Types of Wine


There are two fundamental types of wine based on grape color -- red (from red or black grapes) and white (from white grapes). Grapes of these different colors can have hundreds of varieties, which is why types of wine are so numerous on store shelves. Consumers are the most familiar with names given to the different varieties of grapes. The grape variety is the most important factor in how the wine will taste.

The most popular red types of wine are cabernet sauvignon. Connoisseurs will tell you that the best cabernet sauvignon types of wine come from the Bordeaux region of France. Merlot is another red wine that holds flavors of chocolate and cherry. Grenache is a red wine derived from grapes that hold a raspberry and/or "smoky" flavor. Pinot Noir is a red wine that is very important to the Burgundy region of France. It is difficult to cultivate, but when done right, it gives hints of mint, raspberries, and black cherries. Zinfandel is a very popular red wine that comes from Europe but is grown mostly in
California.

The most-purchased white types of wine are chardonnays. Chardonnay contains fruity tastes mixed in with hints of vanilla. The most cultivated white types of wine in California are Chenin Blancs. This grape is an inexpensive alternative to chardonnay, and has hints of fruit in its taste. Pinot Blanc is often compared to chardonnay, containing tastes of apple and spice when you drink it. Pinot Gris hails from Oregon and is rich in spice flavors. Riesling is grown predominantly in Germany, and has a fruity taste. Semillon contains a peachy flavor and is inexpensive to produce. White Zinfandel is produced in California and has a sweet taste. To produce this wine, red zinfandel grapes have their skins removed during processing, giving a pink end result.

Looking for tips on organizing a wine-tasting fundraiser? Here are some ideas on organizing your fundraising event in order to maximize your proceeds.


Obviously, a wine-tasting event needs wine experts, so begin by seeking suitable merchant partnerships based not only on expertise, but also access to the best wines. After all, you have to be able to provide numerous bottles of expensive wine and there's no sense in paying anything near retail price.


Partner with a wine merchant or distributor who can not only help with supplying wine and expert advice, but can also help sell advance tickets to your event.


Organization Tips
Getting plenty of advance publicity is a must. Take the time to put together a press release and get the word out to local media outlets such as tv and radio stations.


Be sure to offer tickets through not only your organization, but also through participating merchants and other groups who support your cause.


It never hurts to have another nonprofit group plugging your fundraising event to their supporters as well. Strike an agreement to do the same thing for their fundraiser.


You will need a suitable place for your wine tasting fundraiser such as a reception hall or scenic outdoor setting. Arrange tables in a layout to suit the space and leave plenty of room for access to each table.


Experts can describe each tasting while wearing a lapel microphone and visiting each table. Use volunteers to bring a bottle of each vintage to all the tables prior to their discussion and have them handle the pouring.


To add a festive flair, consider providing live music with a string quartet or jazz group.


Profit Tips
There are many additional ways to raise funds at your wine tasting. One is to conduct both silent auctions and live auctions for rare wines and wine-related merchandise.


Run your silent auctions from an easy to reach spot such as the check-in table and always do a last call for bids. With live auctions of expensive wines, consider using a professional auctioneer in order to maximize bid prices.


Talk to your merchant partners about ways where both of you can profit such as offering gift certificates to their stores or special case buys on recommended wines.



Look for tie-ins with other merchants who offer related products such as wine glasses, gourmet food items, or travel trips to wine country.


For really large events, provide valet parking services and raise a few extra dollars.


Additional Event Fundraising
Auctions are an additional way to maximize revenue at your wine tasting event. You can offer bottles of fine wines via silent auction or conduct a live auction.


Raffle tickets are another great way to raise additional funds. They are a great way to offering an inexpensive chance at winning an expensive prize. Sometimes, you can even raise more money buy raffling off an item than by auctioning it to the highest bidder.


With a good-sized crowd, raffle off multiple items. You can use the approach where one fairly pricey ticket gives you a shot at multiple prizes. With a high-priced single raffle ticket being sold, you draw from the same pool for multiple winners.


Another approach is to keep the ticket price low and encourage people to buy multiple tickets. This way, the chance that an individual ticket will win is much lower, but people will often spend a greater amount on the lower-priced tickets.


And of course, a raffle allows you to sell tickets to people who can't make the event but would still like to participate in the fun.


Closing Tips
For a successful wine tasting, be sure to allow yourself enough lead time to successfully publicize and organize your fundraiser event. Get the maximum possible turnout by making tickets available at a discount for advance purchases and at a higher price at the door.


If your location is not well-known, be sure to provide directions on flyers wherever tickets are sold. Print a contact number on the tickets for any last-minute questions.


Do everything you can to make the night memorable. Decorate your location appropriately, provide live music and dancing, use a dedicated announcer, and serve plenty of unusual wines to compare.


Using a local media personality as a host is another great way to ensure a large turnout. It's best to route such requests through the program director of their employer.

The [yellow tail] range of wines have taken the world by storm. And so they should. They are excellent Australian wines which are consistently good. They have clearly won the battle for everyday wines at their particular price range.

But they are a made from classical French grape varieties, Chardonnay, Riesling, Shiraz and Cabernet Sauvignon. As such they represent the successes of Australian winemaking in the 1980s and 1990s.

What will be the wines of the new century? As the wine boom of the 1990s in Australia unfolded, a quiet revolution was taking place. The area planted to grapes expanded rapidly to underpin massive increases in production and exports of Australian wine. But a large number of vignerons and winemakers were also planting alternative grape varieties.

The profile of the Australian wine scene has changed as dramatically as the scale of production. During 2003 a new winery was opened in Australia every day. About half of these new enterprises were growing or using varieties other than the classics mentioned above.

As well as the less common French varieties, growers and winemakers have been pioneering with Italian varieties such as Sangiovese, Barbera, Nebbiolo and Arneis. We have also the Spanish stalwart Tempranillo being increasingly favoured. Even the Russian red grape variety Saperavi is being used. There are probably one hundred wine grape varieties now being produced for commercial wine production in Australia. These new varieties are being planted in traditional areas as well as in new wine regions.

Australia, like other new world wine producers, is less inhibited to the strong ties of tradition that permeate the European wine industry. Since the start of the 1990s a strong predisposition for experimentation has permeated the wine industry. Australian wine consumers are now adopting this ethic. Wine lovers in the US and UK will soon be seeing a new wave of different Aussie wines to taste.

It is safe to say that Chardonnay and Shiraz will continue to dominate wine production in Australia for many years to come. But consumers will have a much wider choice is they are willing to be just a little adventurous.
